Before 2009, Céline Legros, the shop’s proprietor, had no intention of making pastries her career path. She was a lawyer by trade and only made canelés as gifts for friends and family, though she did teach the occasional cooking class. However, five years ago she met chef Jean-Georges Vongerichten, who tried one of her canelés, declared it delicious, and immediately asked where he could buy them. That motivated Legros to make the kitchen her new office, and she began selling her creations to caterers, corporate clients, and hotels.
